FRIDGE FREESTYLN’ EP.22 @シェフヒロ🍣chefhiro THE DISH: Scallop Two Ways -Wasabi Grilled Hokkaido Scallop -Raw Hokkaido Scallop -CItrus Sea Urchin Sauce -Wasabi Parsley Oil PRIMARY INSPO -Chef Hiro is known to create some of the tastiest sushi & Japanese seafood dishes on the internet; I wanted to use his beautiful ingredients and showcase them in a way that isn’t common or traditional at a Japanese sushi restaurant but still felt Japanese SECONDARY INSPO -Chef Hiro runs Sushi Take; a traditional sushi restaurant; I wanted to create a dish that could be potentially served to his guests -I asked Chef Hiro what his life goal is and he said I’m living it because all he wants to do is make people happy through sushi. I wanted to use this inspiration to create a dish that was colorful, playful & makes you happy through presentation& taste -I wanted to cook an ingredient “two ways” because I learned & loved how Chef Hiro not only has the professional fun Chef side but he is also an incredible Father as well as businessman. Chef’s love for his daughter & his passion for business are equally part of him but showcase a different side. This is what I wanted to do with the scallop.
