Bay leaves, rosemary thyme 400 grams pappardelle 1 tablespoon evoo 1 teaspoon garlic 1 teaspoon chillies 1/4 cup heavy cream 1 block parmigiana Method: 1. In a large Dutch oven sear seasoned beef in olive oil until crusted. 2. Remove and toast carrots, celery, onions and garlic. 3. Add tomato paste and deglaze with Tedeschi Amarone. Reduce by half and add stock, toss in herb bundle and braise for 2.25 hours. 4. Break the meat down with a spoon. In a saucepan toast garlic and chillies with olive oil. The tart that’ll make you the apple of their eye 🍏🍎 Serves: 2-10 Prep time: 2 hours Bake time: 12 minutes plus 35 minutes Ingredients: Short Pastry 2 1/4 cups all purpose flour (340g) 1/2 teaspoons kosher salt 3/4 cup grated cold butter (170g) 6 tablespoons ice water (90ml) Apple Tart 2 cups 2-year-old-cheddar, grated 1.5 tablespoons thyme, picked 4 ambrosia apples, sliced 2 tablespoons butter, cubed 3 tablespoons maple syrup Garnish 1 tablespoon Flakey salt Method: For the Short Pastry: 1. Toss flour, butter and salt into a food processor with half the water. Blitz and add the rest of the water slowly. When it comes together, remove and wrap in plastic wrap in a large disk shape. This can also be done by hand. 2. Chill for 30 minutes. 3. Roll out to 1/6 of an inch and blind bake for 12 minutes at 375F. For the Apple Tart 1. Layer cheddar with thyme in the bottom of your tart shell. Top with sliced layered apples skin up. Place nubs of butter around and pour over the maple syrup. 3. Bake at 350F for 35 minutes 4. When you miss Thanksgiving, you have to pull out all the stops with Grandma Geraldine’s Tarragon Mustard Turkey. 🦃 Serves: 8-14 Prep time: 6 minutes Cook time: 3-4 hours Special tools: roasting pan Ingredients: 2 tablespoons Keen’s dry mustard 115lb Canadian turkey 3/4 lb butter, diced 3 tablespoons fresh tarragon 1 lemon, juiced and zested 1 tablespoon kosher salt 1/2 tablespoon black pepper Method: 1. Pull your turkey out and get it to room temperature. We prefer a spatchcock (backbone removed) for a more even cook. 2. Mix up butter, mustard, tarragon, lemon juice and zest, salt and pepper. 3. Slather the butter evenly over and under the skin. 4. Roast at 425F for 1 hour until you get the colour and caramelization. 5. Cover, bring your heat down to 300F until you get an eternal temperature of 160. 6. This one is pretty easy. Season your squash with olive oil, salt and pepper roast at 450F until edges get crispy. Add pecans and toast for another 2 minutes. Remove and let cool slightly but best if they go into the bowl while still warm. 2. Mix up your dressing in a small jar and shake until lightly emulsified. 3. Toss all greens and pears into a bowl.
